Asparagus Shrimp Soup

Everyone likes asparagus and this unusual combination of asparagus with shrimp and mushroom makes an unforgettable soup

Ingredients

  • 1, Lb Asparagus
  • 1, Cup Shrimp
  • 6, Mushroom
  • 2, Branch Spring Onion (Scallions)
  • 1, Green Chili
  • 3, Tsp Corn Flour
  • To taste Salt
  • A pinch Ajinomoto
  • 4, Cup Water
  • 1, Tbsp Butter

Instructions

  1. Peel asparagus stalks and cut into one inch piece.
  2. Wash and devein shrimps.
  3. Wash and slice mushrooms into thin slices. Chop spring onion and green chili finely.
  4. Bring to boil chopped asparagus with five cups water. Reduce heat and simmer for about 30 minutes till asparagus are cooked fully. Cool and strain the stock and keep aside. Crush about15 or 20 pieces of asparagus pieces and keep aside..
  5. Heat butter in a pan add mushrooms, spring onion and green chili and fry for about four minutes with stirring. Add shrimps and continue frying for another three minutes.
  6. Add corn flour and fry for two minutes. Add the asparagus stock gradually with stirring constantly Add mashed asparagus and simmer in slow heat for ten minutes…
  7. Remove from heat and serve hot sprinkle with freshly ground black pepper.

Kali Dal (Black Uradh dal)

Black Split Gram Dal  cooked with lots of  Garlic. Taste of garlic makes this lentil preparation a good beginning to any meal.

Ingredients

  • 1, Cup (split) Black Gram (Urad)
  • 5, Cups Water
  • 0.5, Tsp Turmeric powder
  • 1, Tsp Whole Red Chili
  • 0.5, Tsp Cumin Seed Powder
  • 0.5, Tsp Coriander Seeds
  • 3, Chopped Green Chili
  • 2, Whole Whole Red Chili
  • 5, cloves of  Garlic (finely chopped)
  • To taste Salt
  • 0.5, Tsp Sugar
  • 1 tbsp Oil

Instructions

  1. Heat a pan and dry roast the black split gram dal (urad dal). Wash the roasted dal.
  2.  Put the dal with five cups of water in a pressure cooker.
  3. Add coriander, cumin, turmeric and red chili powder, green chili, salt and sugar. Close lid and bring to boil. Continue till about 12 to 15 whistles. Cool and open the pressure cooker.(Check that the dal is cooked).
  4. Heat oil and fry whole red chili till light brown. Add chopped garlic and fry till brown. Add the cooked dal and bring to boil, reduce heat and simmer for five minutes.
  5. Serve hot with steamed rice .

lizseger (3/9/2006)….Very quick, very good. The first time it seemed the water wasn’t enough — it stuck to the bottom of the pressure cooker and was a bit thick, but the next time I added a dab of ghee to the dal and water in the pressure cooker to prevent sticking, and it worked beautifully.

Vegetable Fried Rice

A great vegetarians delight.

Ingredients

  • 2, Cup Rice
  • 4, Cup Water
  • 3, Oz (chopped) Spring Onion (Scallions)
  • 0.5, Cup Cauliflower
  • 1, Cup Green Peas
  • 1, Cut into thin strips Carrot
  • 0.5, Cup (chopped) French Bean
  • To taste Salt
  • A pinch Ajinomoto
  • 1, Tsp Soya Sauce
  • 2, Chopped Green Chili
  • 1, Tsp Ginger

Instructions

  1. Wash and soak rice in four cups of water for one hour. Cook rice till halt done.
  2. Heat oil and add spring onion, ginger and green chili and fry for about two minutes. Add all the vegetables and stir. Fry for three minutes. Add the half cooked rice and cook for fifteen minutes with stirring. Add Soya sauce and ajinomoto and mix and remove from heat
  3. Serve hot.

n_roychaudhuri (12/29/2007)….AJINOMOTO IS BANNED ALMOST ALL OVER THE WORLD. IT IS CALLED MSG. MONOSODIUM GLUCAMATE. IT MAKES FOOD TASTY BUT IS VERY BAD FOR HEALTH. NABONITA

babuji (1/14/2007)….This is a very delicate Chinese style fried rice recipe. She didn’t mention salt because, it is in the soy sauce. Adding ketchup would ruin the recipe from a light, fresh, healthy recipe, to a fake, fast-food-style recipe. What is this habbit of adding ‘ketchup’ to everything? I would leave all the ingredients as is, and only adjust seasonings according to taste.

Saag Meat

Meat cooked with spinach and oriental spices

Ingredients

  • 1, Lb Meat (lamb or goat)
  • 8, Oz Spinach
  • 2, Chopped Onion
  • 1, Chopped Tomato
  • 1, Inch piece Ginger
  • 10, Stalk Cilantro
  • 5, Green Chili
  • 1, Tsp. Mustard seeds
  • 0.5, Tsp. Fenugreek seeds
  • 1, Tsp. Red Chili Powder
  • 0.5, Tsp. Turmeric powder
  • 1.5, Tsp. or to taste Salt
  • 0.5, Tsp. Sugar
  • 4, tbsp. Ghee

Instructions

  1. Clean and wash mutton. Wash thoroughly spinach and chop finely.
  2. Grind all ingredients from ginger to salt to fine paste with little water.
  3. Heat ghee. Fry onion for 3 minutes and add the masala paste and fry for four minutes.
  4. Add mutton pieces and continue cooking till ghee starts to separate.
  5. Add spinach, tomato and sugar and little water and continue cooking till done
  6. Serve hot.

Omelet Curry With Rice

This mouth watering dish is favorite of all those who love eggs.

Ingredients

  • 6, Egg
  • 1, tsp Garam Masala Powder
  • 2, cloves to paste Garlic
  • 2, inches to paste Ginger
  • 6, chopped Green Chili
  • 2, tbsp Milk
  • 1, large finely chopped Onion
  • 2, small size cut into cubes Potato
  • 2, tsp Whole Red Chili
  • to taste Salt
  • 1, small, thinly sliced Tomato
  • 0.5, tsp Turmeric powder

Instructions

  1. Beat eggs. Add chopped onion, ginger, salt, green chilies, pinch of turmeric powder and whisk
  2. Heat oil in a frying pan, pour the egg batter and make omelets. Make  6 omelets out of it. Cut eacht into three pieces.
  3. In another frying pan heat oil add one tsp cumin seeds and two bay leaf. When splutters add  chopped onions. Fry till light golden brown.
  4. To it add potatoes and fry for 1-2 min. Then add ginger, garlic paste, turmeric, red chili powder and stir for 2 min. Add tomato to it and fry till  oil separates in the pan.
  5. Add milk to it then stir for few minutes. Then add 1 cup water, omelets, salt, garam masala and wait till one boil comes. Lower the heat and let it simmer for 10 to 15 min.
  6. Serve hot with Basmati Rice.

Fried Egg Pakora Curry

Different kind of egg curry in which the boiled eggs is first fried in a special batter, and then a special curry is made. Very tasty.

Ingredients

  • 8, pc Egg
  • 1, large Onion
  • 0.5, inch Ginger
  • 1, flake Garlic
  • 1, tsp grounded Coriander Seeds
  • 1, tsp Cumin Seed Powder
  • 0.5, tsp Turmeric powder
  • 1, tsp Red Chili Powder
  • 1, cup Whole Wheat Flour
  • 1.5, cup Water
  • 2, pc Bay Leaf
  • 0.5, tsp Cumin Seeds
  • 6, tbsp Cooking Oil
  • 2, pc Potato

Instructions

  1. Make a paste of Onion, Ginger, Garlic, Coriander Powder, Cumin Powder, turmeric and Red Chill Powder.
  2. Make another batter of Wheat, 1/2 tsp. Turmeric Powder, and 1/2 cup water.
  3. Hard boiled the eggs. Cut into 2 pieces. Dip the eggs in the batter and then deep fry it in oil. Peel the potatoes and mix it with salt and little turmeric powder. Then deep fry the potatoes till they turn golden brown. Keep the eggs and potatoes aside.
  4. Heat the oil and add the Bay leaves and Cumin Seeds. Fry for about 15 sec then add the paste made in step 1.
  5. Add the masala paste and then fry for 10 to 15 min at low heat till oil comes out.
  6. Add 1 cup water and bring it to boil. Then add the fried eggs and the potatoes and boil it for 5 minutes. Add salt to taste. Serve with hot rice.

Alu Dum

Spicy Potato curry.

Ingredients

  • 6, medium, cut into 4 pc Potato
  • 2, medium Onion
  • 4, cloves Garlic
  • 1, tsp Coriander Powder
  • 1/2, tsp Cumin Seed Powder
  • 1.5, tsp Red Chili Powder
  • 1/4, tsp Turmeric powder
  • to taste Salt
  • 2, tbsp Ghee
  • 4, tbsp Cooking Oil
  • 1, cup Water
  • 1/2, tsp Garam Masala Powder
  • 1, tbsp Tomato Puree
  • 2, Bay Leaf
  • 1/2, inch Ginger

Instructions

  1. Mix pinch of turmeric powder and salt to the potato pieces and shallow fry in a pan and keep it aside.
  2. Finely Chop 1.5 onions and keep it aside. Make a paste of the half onion, garlic and ginger and keep it aside.
  3. Heat 1 tbsp Ghee and all of the cooking oil in a frying pan. Add bay leaf and fry for 30 sec.
  4. Then add the chopped onions, and fry it till golden brown. Add the ginger-garlic-onion paste and fry for another 2 minutes.
  5. Add rest of the spices and the tomato puree less Garam masala powder. Fry in low heat till oil leaves the side of the pan.
  6. Add the fried potatoes and stir for another minute or so. Add water, sugar, salt, Garam masala powder, and ghee and bring it to boil.
  7. Cook it in low heat till the potatoes are properly cooked and the gravy is thick.
  8. Serve with paratha or luchi.
